Mississippi Mud Cake

Thick, rich, a chocolate lover’s dream. This one isn’t for the faint of heart – you have got to break out your sweet tooth for this one. But it is so worth it.

10 min.

Serves
6-8

Ingredients

2 c. sugar
1 c. shortening
4 eggs
1 ½ c. self-rising flour
1/3 cup cocoa
3 tsp. vanilla
1 c. nuts
3 c. mini marshmallows

Directions

  1. Preheat oven to 300 degrees.
  2. Mix together sugar, shortening, and eggs.
  3. Sift flour and cocoa into sugar mixture. Add vanilla and nuts. Mix well.
  4. Pour batter into 9×13 cake pan.
  5. Bake for 30 minutes. Take out of oven. Pour marshmallows onto cake.
  6. Watch until melted, then remove from oven.
  7. Pour icing onto warm cake.
