Chicken Spinach Tortellini Soup

The ultimate combination of the best comfort foods: pasta and soup. This one is a winter favorite around here. It doesn’t require elaborate ingredients and it is quite easy to make. You’ll certainly enjoy this creamy and filling soup.

Serves 6-8

Ingredients

1 tbsp. olive oil 1 sweet onion 4 cloves garlic 1 1/4 lbs. boneless, skinless chicken breast 9 c. chicken broth 1 tsp. salt

9 oz. Cheese Tortellini Pasta 1/4 c. heavy cream 2 c. fresh spinach 1/2 tsp. crushed red pepper 3 tsp. pepper

Directions

1. Place a large pot over medium heat. Add the olive oil and chopped onions. Saute for 3 minutes.
2. Add garlic. Saute for another 3 minutes.
3. Add whole raw chicken breasts, broth, and all seasonings.
4. Bring to a simmer.
5. Simmer for 15 minutes, until the chicken is cooked through.
6. Remove and chop chicken.
7. Over medium heat, stir in tortellini and spinach. Place chopped chicken back in the soup.
8. Cook for about 12 minutes, or until tortellini is done.
9. Stir in the cream.
