Ingredients
2 c. sugar 1 ½ c. oil 4 eggs 2 ¼ c self-rising flour | 2 tsp. cinnamon 3 c. grated carrots 1 ½ c. pecans Cream Cheese Frosting |
Directions
- Preheat oven to 300 degrees.
- Combine sugar, oil, and eggs. Beat at medium speed for 2 minutes.
- Sift together the dry ingredients.
- Add to sugar mixture.
- Stir in carrots and pecans.
- Spread in 9×13″ pan.
- Bake for 1 hour or until knife inserted comes out clean.
- Frost with Cream Cheese Frosting.
