The ultimate combination of the best comfort foods: pasta and soup. This one is a winter favorite around here. It doesn’t require elaborate ingredients and it is quite easy to make. You’ll certainly enjoy this creamy and filling soup.

Ingredients
1 tbsp. olive oil 1 sweet onion 4 cloves garlic 1 1/4 lbs. boneless, skinless chicken breast 9 c. chicken broth 1 tsp. salt | 9 oz. Cheese Tortellini Pasta 1/4 c. heavy cream 2 c. fresh spinach 1/2 tsp. crushed red pepper 3 tsp. pepper |
Directions
- Place a large pot over medium heat. Add the olive oil and chopped onions. Saute for 3 minutes.
- Add garlic. Saute for another 3 minutes.
- Add whole raw chicken breasts, broth, and all seasonings.
- Bring to a simmer.
- Simmer for 15 minutes, until the chicken is cooked through.
- Remove and chop chicken.
- Over medium heat, stir in tortellini and spinach. Place chopped chicken back in the soup.
- Cook for about 12 minutes, or until tortellini is done.
- Stir in the cream.
- Enjoy!
