Delicious on its own or served over white rice or with cornbread. Just the right amount of spice and packed with shrimp. But feel free to spice it up as you like.

Ingredients
1/2 c. vegetable oil 1/2 c. all-purpose flour 1 large onion, diced 1/2 c. chopped fresh parsley 1/2 c. chopped celery 1/2 c. chopped green bell pepper 1/2 c. sliced scallion | 6 cloves minced garlic 4 c. chicken broth 1 tsp. salt 1 tsp. creole seasoning 2 lbs. shrimp 1/2 c. chopped red bell pepper |
Directions
- In a large pot combine oil and flour. Cook over medium-high heat about 15 minutes or until a very dark brown. Stir almost constantly.
- Add onions, parsley, celery, bell peppers, scallions, and garlic. Cook about 10 more minutes, stirring regularly.
- Add broth, salt, and creole seasoning.
- Cover pot and simmer 20 minutes stirring occasionally.
- Add shrimp and simmer an additional 15 minutes or until shrimp are cooked.
- Ladle over steamed white rice.
