Almost as American as apple pie. This decadent, delicious cake is incredibly moist. The apples, coconut, and hint of lemon create a melody that cannot be denied.

Ingredients
½ c. shortening 1 c. granulated sugar 1 ¾ c. brown sugar 2 eggs 2 ½ c. sifted flour 2 cups chopped apples 1/3 c. butter ½ c. pecans, chopped or whole | 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 c. milk Grated rind of 1 lemon 1 tsp. vanilla 1 c. moist coconut |
Directions
- Preheat oven to 375 degrees.
- Cream shortening. Add sugar gradually (save ¾ cup of brown sugar), continuing to cream together.
- Beat in eggs one at a time.
- Sift all dry ingredients together. Add this mixture to the shortening mixture, alternating between it and the milk.
- Stir in lemon rind, chopped apples, and vanilla.
- Combine butter, remaining ¾ cup of brown sugar, coconut, and pecans together and cover over cake.
- Bake for about 45 minutes or until done.
