Potatoes of any kind are always the star of the side dish show, but these take the crown. They are our all-time favorite potato dish. Cheesy, buttery, creamy – they are simply the best!

Ingredients
10 small potatoes 1 stick butter 1 onion Garlic powder to taste | 3/4 c. sour cream 1 1/2 c. shredded Monterey Jack Salt and pepper to taste |
Directions
- Preheat oven to 400 degrees.
- Cook potatoes unwrapped for about 1.5 hours, just when they are tender but not mushy.
- While potatoes are cooking, saute the onion in the stick of butter.
- Once onions are translucent, remove from heat to cool.
- After potatoes are done and cool enough to handle, slice them in half longways then scoop out their insides into a bowl.
- Mix together the potato, sauteed onions and butter, sour cream, cheese, salt, pepper, and garlic powder in the bowl.
- Spoon the mixture back into the potato skins until they are full.
- Return to pan and cook for an additional 15 minutes at 350 degrees.
